
It takes only 30 minutes to prepare this scrumptious prawn dish. SATAY PRAWNS Serves: 4? Prep time: 30 minutes INGREDIENTS 3 tbsp sunflower oil? 1 Tbsp garlic, crushed? 1 onion, chopped? 3 red chillies, chopped? 3 lime leaves? 1 tsp garam masala? 1 cinnamon stick? 1/3 cup crunchy peanut butter? 3 Tbsp tamarind paste ?2 Tbsp fish sauce? 2 Tbsp brown sugar Zest of 3 lemons? 1 lemon, juiced? 1kg king prawns? 1/2 cup plain yoghurt ?Handful fresh coriander, chopped METHOD
- Heat half the oil in a pan and fry the garlic and onion until soft. Add chillies, lime leaves and garam masala, and cook for 2 minutes. Stir in cinnamon sticks, peanut butter, tamarind, fish sauce, sugar and lemon juice. Reduce heat and simmer for 15 minutes, stirring occasionally.
- In another pan, heat the remaining oil and fry the prawns until pink and firm. Add the curry sauce and stir in the yoghurt, and simmer for another 2 minutes on low heat. Stir in the coriander and serve.
