INGREDIENTS
- 4 pork trotters
- 6 cups beef stock
- 1 onion, finely chopped
- 3 garlic cloves, chopped
- 1 cm ginger, chopped
- 2 T medium curry powder
- 2 tsps oil
- Few curry leaves
- Pap or ting, for serving
METHOD
1. Place pork trotters in a large saucepan, and add beef stock. Boil for 2 hours.
2. Blend onion, garlic, ginger and curry powder. Drizzle oil on top, and blend to form paste. Scoop out a bit of stock from the saucepan and add to the paste. Blend until very smooth.
3. Pour paste into the stock saucepan. Add curry leaves and cook for 30–45 minutes or until trotters are soft.
4. Serve with pap or ting.
